Eat the Meatball!

Meat Meat Meat Meat Meat Meat BALL!  Eat the meatball!!

This is something we chant on meatball night in our house and you must punch your fists up in the air while you are doing it. The kids saw it once on one of their cartoons and we’ve been doing it ever since.  When you have small kids you do weird things.

But seriously who wouldn’t want to eat these meatballs?!

Nothing says a home cooked meal like meatballs, garden potatoes and green beans on grandma’s hand me down dishes. Yum! Here’s the recipe:

Meatballs:

  • 1 lb Ground Beef
  • 1 egg
  • 2 Tbsp Water
  • 1/2 C Bread Crumbs
  • Small Onion – Minced
  • 1/2 Tsp Salt
  • 1/8 Tsp Pepper
  • 2 Tbsp  Parsley

Mix together and form into 1 1/2 inch meatballs.  You have a couple different options now.  First you can brown them and toss them in a crockpot with the gravy (see below for the recipe) on low heat for 5-6 hours.  Or you can bake your meatballs on a cookie sheet for 15-20 minutes at 400 degrees.  This allows you to heat up the gravy and serve together immediately or freeze them for later use.  I did this last year for Christmas.  I made huge batch of meatballs a week ahead of time, froze them, then made the gravy the morning of and put it all together in the crockpot

Gravy:

  • 1 Can Cream of Mushroom
  • 1 Cup Water
  • 1/2 Tsp Dried Thyme
  • 2 Bay Leaves
  • 1 Packet Gravy Mix ( brown or turkey flavored – whichever you have on hand just not dark brown – yuck!)

Simply mix the ingredients together and heat.  I usually double the gravy recipe though – I’m a gravy hog!
