Strawberries are finally in season and that means it’s time to make my mother-in-law’s amazing strawberry pie. It’s so easy, super refreshing and insanely delicious! As you can see from one of my favorite pictures of my son from about 5 years ago – it’s a family favorite!
Strawberry Pie
Pie Crust:
1 1/3 C flour
1/2 tsp salt
1/2 C shortening (or try coconut oil as a substitute – it gives an amazing tropical flavor)
Mix flour and salt together. Cut in shortening. Add water and roll. Place in a 9″ pie pan and bake for 10-15 minutes at 425 degrees.
Once out of the oven fill your crust with sliced strawberries.
Filling:
1 C sugar
1 C water
2 tbsp cornstarch
3 tbsp strawberry or raspberry jello
Boil sugar, water and cornstarch until clear. Mix in jello and let cool. Pour over fruit and refrigerate for 4-5 hours.

I had posted about this wonderful pie on one of your social media areas and I have to say, it was one of the BEST pies I have ever made~ I never made a strawberry pie before and it was my first and it was super easy & delicious.
